How To Make Sweet Potato Noodles

If you’ve been paying attention to food trends lately, then you’ve probably seen the term “zoodles” e-v-e-r-y-w-h-e-r-e.  

Hailed as a healthy and gluten free alternative to regular pasta noodles, zoodles are made by taking a zucchini and using a device called a spiralizer to cut them into long, noodle-like strips.

If you have tried them, loved them and are thinking, “been there done that”… then I have a NEW healthy noodle for you to check out.

Let me introduce you to sweet potato noodles!

Benefits Of Sweet Potato Noodles

Sweet Potato
  • Provide an abundance of vitamin A (beta-carotene) – especially the skin!
  • Excellent source of antioxidants
  • Valuable for their anti-inflammatory health benefits
  • Help improve blood sugar regulation
  • 1 large sweet potato give you 25 percent of your daily potassium needs
  • Contains fiber, vitamin C, copper, niacin, vitamin B5 and manganese

How To Make Sweet Potato Noodles
  • 1 large sweet potato
  • 1 tbsp olive oil
  1. Wash potato thoroughly (no need to remove skin unless desired).
  2. Cook potato for 10 minutes in a 400 degree Fahrenheit oven.
  3. Note: potato will not be fully cooked at this point.
  4. Allow the potato to cool.
  5. Use a spiralizer to create sweet potato noodles.
  6. In a pan, combine olive oil and sweet potato noodles for:
  7. minutes - slightly crunchy texture.
  8. -8 minutes - softer texture.

Choosing a spiralizer:

  • You can find a basic spiralizer for around $15-20 at your local market or HERE.
    • Note: hand held spiralizers do not work as well in this case
    • I found one at TJ Maxx for $15!

Now that you have your sweet potato noodles, WHAT will you use them for?

You can use your favorite homemade sauce, simply toss them in grass-fed butter, or try out this delicious homemade sesame sauce, which is DE-LISH!

Savory Sesame Sauce
  • 1 tbsp toasted sesame oil
  • 2 tbsp tahini paste
  • 2 tbsp raw apple cider vinegar
  • 2 tbsp raw honey
  • 1 tbsp sesame seeds
  • ¼ tsp sea salt
  • Pinch of crushed red pepper flakes
  1. Whisk together all the ingredients (aside from the sesame seeds) in a bowl.
  2. Toss sauce together with sweet potato noodles.
  3. Sprinkle with sesame seeds and diced green onion (optional)
