How To Make Kimchi Bean Sprout Soup

Yummmm… Just thinking about my favorite soup as a child makes my mouth water. Excuse the spelling above, I only remember the kid name I gave this delicious delight.

Growing up next to a Korean family opened my eyes up to the incredibleness of Korean cuisine. From crunching on kimchi to slurping up steamy soup, I developed an international palate from quite a young age!

I love healthy, I love spicy and I love soup. When you place all three elements in one bowl… my taste buds light up!

As the chilly weather heads your way, warm up with this tasty and easy to prepare soup.

Kimchi Bean Sprout Soup
Serves: 4
  • 7-10 large anchovies
  • 6 cups water
  • 1 ½ cups sour cabbage kimchi
  • ½ packet of bean sprouts, cleaned
  • ½ teaspoon salted shrimp of fish sauce
  • Salt to taste
  • 1 chopped green onion
  • 1 green or red chilli, optional
  • 1-2 handful of oyster mushrooms, optional
  1. Bring the water and anchovies to a boil in a soup pot.
  2. Reduce heat and simmer 5 minutes.
  3. Remove anchovies.
  4. Add bean sprouts, kimchi and mushrooms (optional) to the soup pot.
  5. Bring everything to a boil.
  6. Cover and simmer over medium-low heat for 10 minutes.
  7. Add salted shrimp or fish sauce. Taste.
  8. Add salt to your desired taste.
  9. Add chili slices and simmer 2-3 more minutes.
  10. Sprinkle with green onion.
  11. Enjoy!
