Healthy Pumpkin Pie Chocolate Chip Oatmeal Cookies Recipe

It’s September and fall is literally around the corner. That means cooler nights, football games, Halloween, bonfires… well, that is just how we love it down in the South. Not to mention those pumpkin goodies! I think that has to be my favorite part of fall.

With many pumpkin goodies, there can be loads of sugar in them, which is not exactly healthy for you. And those cans of pumpkin puree could more than likely be processed, so it is always best to make your own from a fresh pumpkin.

Here’s how to make pumpkin puree for those yummy pumpkin goodies:

1. Preheat oven to 325 degrees F (165 degrees C).

2. Cut the pumpkin in half, stem to base. Remove seeds and pulp. Cover each half with foil.

3. Bake in the preheated oven, foil side up, 1 hour, or until tender.

4. Scrape pumpkin meat from shell halves and puree in a blender. Strain to remove any remaining stringy pieces. Store in the freezer in freezer safe bags.

Pumpkin Pie Chocolate Chip Oatmeal Cookies

  • 1 cup instant oats
  • ¾ cup gluten-free flour
  • 2 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¼ tsp ground ginger
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • 2 tbsp coconut oil or unsalted butter, melted and cooled slightly
  • ¾ cup homemade pumpkin purée
  • 1 tsp vanilla extract
  • ½ cup pure maple syrup
  • 2 tbsp dark or semisweet chocolate chips
  • 1 tbsp miniature chocolate chips 

Instructions:

1. Preheat the oven to 325°F and line a baking sheet with parchment paper or a silicone baking mat.

2. Whisk together the oats, flour, cinnamon, nutmeg, ginger, baking powder and salt in a medium bowl.

3. In a separate bowl, whisk together the coconut oil, pumpkin purée and vanilla.

4. Stir in the maple syrup.

5. Add in the flour mixture, stir until mixed.

6. Fold in the dark chocolate chips and ½ tablespoon of miniature chocolate chips.

7. Drop the cookie dough into 15 rounded scoops onto the prepared sheet and flatten to the desired thickness and width using a spatula. Gently press the remaining miniature chocolate chips into the tops.

8. Bake at 325°F for 11-14 minutes.

9. Cool on the pan for 10 minutes before turning out onto a wire rack.

Dark chocolate contains a massive amount of antioxidants which help your immune  system to fight off diseases and illnesses. These antioxidants also help to fight off free radicals that can cause damage to your cells and cause premature aging.

Dark chocolate also increases blood flow to your brain and heart. It helps to dilate your blood vessels which in turn, lowers your blood pressure and allows your body to get more oxygenated blood.

Plus, with all these extra spices in these pumpkin goodies, you can safely say these are great for your body, not to mention have an amazing taste! Give them a try this season and let us know how it goes!
