How To Make Delicious Gluten-Free Pumpkin Pancakes

It’s the month of October and everyone is ready for a little fall bliss!

For the next few weeks, pumpkins and pumpkin products are everywhere! I’ve been stocking up on canned pumpkin, because we use it in our household all the time to make delicious, gluten-free recipes.

During this beautiful season, my husband and I love waking up on slow mornings when the air is still crisp and making a batch of these amazing, paleo pancakes. They are soft and fluffy and you won’t miss white flour for a second when you are eating them!

Gluten-Free Delicious Pumpkin Pancake Recipe

Ingredients
  • ¼ cup canned pumpkin
  • 3 eggs
  • 3 tbsp almond milk
  • 1 tbsp honey or pure maple syrup
  • 1 tbsp coconut oil
  • 1 tsp cinnamon
  • 1 tsp nutmeg (or just a pinch depending on preference)
  • ½ tsp salt
  • ¼ tsp baking soda (optional)
  • dark chocolate chips (optional)
Instructions
  1. Heat some coconut oil in a pan.
  2. Mix together all ingredients until smooth.
  3. Pour about ¼ cup into pan to form a pancake.
  4. Cook on medium heat for 2 minutes (or until bubbles appear in several places) and flip.
  5. Serve and enjoy with raw honey, pure maple syrup, homemade jam, fresh fruit or organic butter.
