Protein Strawberry Shortcake Recipe (Gluten-free!)
 
Ingredients
  • Muffins
  • 7 scoops Organifi Protein Powder
  • 4 eggs
  • ½ cup of water
  • ½ cup of coconut oil
  • 3 tbsp of coconut flour
  • ½ tsp of baking powder
  • Strawberries
  • Strawberry Sauce
  • ½ apple
  • 1-2 cups strawberries
  • 1 lemon’s worth zest
  • 1 tbsp chia seeds
  • Coconut Whip Cream
  • 1 cup frozen cashews
  • 1 can coconut cream
  • 1 tbsp coconut oil
Instructions
  1. For Muffins:
  2. Preheat oven to 325F.
  3. Blend all ingredients except strawberries in a high power blender until smooth and thick.
  4. Scoop batter into a greased muffin pan.
  5. Bake for 20-25 minutes.
  6. Top with strawberry sauce and coconut whipped cream.
  7. Enjoy!
  8. For Strawberry Sauce
  9. Juice the apple.
  10. Combine apple juice, strawberries, lemon zest and chia seeds.
  11. Pulse/blend until combined, but still chunky.
  12. For Coconut Cream
  13. Blend coconut cream, coconut oil and frozen cashews in a blender and blend until smooth.
