Protein Strawberry Shortcake Recipe (Gluten-free!)
Blend all ingredients except strawberries in a high power blender until smooth and thick.
Scoop batter into a greased muffin pan.
Bake for 20-25 minutes.
Top with strawberry sauce and coconut whipped cream.
For Strawberry Sauce
Juice the apple.
Combine apple juice, strawberries, lemon zest and chia seeds.
Pulse/blend until combined, but still chunky.
For Coconut Cream
Blend coconut cream, coconut oil and frozen cashews in a blender and blend until smooth.
