I speak from experience on this topic because I have had amazing changes occur in my own life through the elimination of inflammatory foods like gluten, soy, sugar and dairy. Along with adding in vegetable juicing and consuming more whole foods, both of which have tremendous healing power.

Two years ago, I had lasik surgery to correct my vision; I was considered to be legally blind without glasses or contacts. When I drove at night, I suffered from halo vision making it difficult for me to see. While the surgery was able to restore my 20/20 vision, it left me with a condition called xerophthalmia, or dry eye.  My case was pretty severe and prevented me from seeing as clearly as I should have been able to. The condition did not improve with time or saline eye drops and I was prescribed an eye drop called Restasis.  I was told that I would need to be on these drops for the rest of my life.

A year later, I went in for a checkup on my vision. There hadn’t been much improvement so we decided that I would continue using the Restasis drops. At the time, I had recently joined Fitlife.tv and began vegetable juicing. As I worked through the program and started small group coaching, I begin adding more parsley to my juices. My favorite juice consisted of cucumber, celery, lemon, ginger and parsley. I drank this juice almost daily. During this time, I noticed that when I added in parsley, my eyes were not feeling as dry and itchy. I began to have days where I didn’t need to use the eye drops because my eyes weren’t itchy or blurry at all, which was awesome!  

eyechart eyes, dry, parsleyI just recently went for a checkup on my vision and my opthalmologist was quite surprised at what he found. My vision was clearer, not perfect, but clearer and he stated that my eyes were visibly healthy upon examination. There were no signs of dry eye and my eyes are now making plenty of tears on their own.

I spoke at length with my ophthalmologist regarding the changes I have made in my life and he was quite surprised at the improvements. He told me that I am the first patient that he has ever known to get off the Restasis drops with success!

So what changed?

ParsleyGarnish2-600x400 eyes, dry, parsleyFirst of all, juicing raw fruits and vegetables in general will help show overall improvements in health, especially changes in skin, hair, nails and improved sleep.  Dry eye is caused by a chronic deficiency in vitamin A, which prevents epithelial cells from secreting mucus that lubricates the eye. This lack of lubrication causes chronic inflammation in the eye, resulting in the condition of dry eye.

Parsley, one of the main ingredients in my juices is rich in anti-oxidants, including vitamin-A, beta-carotene, vitamin-C, vitamin-E, zea-xanthin, lutein and cryptoxanthin. The herb is also an excellent source of vitamin-K and folates.

When you begin a regimen of juicing and eating whole foods, your body receives the necessary nutrients which help reduce chronic inflammation, allowing the eyes to begin producing the necessary mucus, which lubricates the eyes and allows for improved, clearer vision. While parsley may not correct deficits in your vision, it is possible that it will  help to improve the symptoms associated with dry eye.

Recipe type: Juice
  • 1 cucumber
  • 3 stalks of celery
  • 1 lime
  • 1 handful of parsley
  • 1 handful of cilantro
  • 1 piece of turmeric
  • Himalayan pink salt
  1. Wash and prep all produce for juicing.
  2. Moisten the rim of your glass with water and run the rim of your glass through some pink salt which will stick to your glass.
  3. Place a pinch of pink salt in the bottom of your glass.
  4. Juice all produce together and stir.
  5. Pour into your waiting glass and garnish with a slice of lemon or lime if you like.
  6. Enjoy!
