Peanut Butter & Chocolate Chip Protein Cookies
 
 
Serves: 1 dozen cookies
Ingredients
  • 1 cup rolled oats (we used quick oats)
  • 2 scoops Organifi Complete Protein Powder
  • ½ cup soy & dairy free mini chocolate chips (we used Enjoy Life brand)
  • ½ cup ground flaxseed meal
  • ½ cup organic natural peanut butter
  • 1 egg
  • ⅓ cup honey or maple syrup
  • 1 tsp pure vanilla extract
  • 2 tbsp coconut oil
Instructions
  1. Set oven to 350 degrees F.
  2. Combine all ingredients in a bowl. Scoop into balls and put on cookie sheet. Press balls slightly down with hand.
  3. Bake for approx 5-7 minutes. These cookies bake quickly… so be sure not to overbake or they will be hard!
