Peanut Butter & Chocolate Chip Protein Cookies
- 1 cup rolled oats (we used quick oats)
- 2 scoops Organifi Complete Protein Powder
- ½ cup soy & dairy free mini chocolate chips (we used Enjoy Life brand)
- ½ cup ground flaxseed meal
- ½ cup organic natural peanut butter
- 1 egg
- ⅓ cup honey or maple syrup
- 1 tsp pure vanilla extract
- 2 tbsp coconut oil
- Set oven to 350 degrees F.
- Combine all ingredients in a bowl. Scoop into balls and put on cookie sheet. Press balls slightly down with hand.
- Bake for approx 5-7 minutes. These cookies bake quickly… so be sure not to overbake or they will be hard!
