Green Vegan “Meatballs”
  1. Turn on the oven at 390F.
  2. Clean the broccoli florets and steam them for 2-3 minutes.
  3. Make your flax eggs.
  4. Clean the onions and garlic.
  5. Add your broccoli, flax egg, onion and garlic to a food processor. Add the lemon juice, salt, pepper, oregano and other spices. Process well.
  6. Add the flours and the oats and mix it all with a spoon.
  7. Taste and add more spices if you want to.
  8. Roll little balls out of the mix.
  9. Place them on a tray on parchment paper.
  10. Bake them in the oven for about 25 minutes.
  11. Serve it with salad, vegetables, rice, GF pita bread, or hummus.
