How To Make Quinoa Breakfast Tacos
  • 1 cup cooked quinoa
  • 3 eggs
  • 1 cup green pepper & red peppers
  • ¼ cup fresh cilantro, finely chopped
  • 1 large avocado, sliced
  • 1 fresh tomato, diced
  • 2 scallions, thinly sliced
  • ½ fresh lime, sliced
  • Sea salt and black pepper to taste
  • 6 whole grain tortillas, gluten free if desired
  1. In a skillet, saute the green and red peppers in a bit of coconut oil to soften.
  2. Add the eggs and scramble together with the peppers.
  3. Stir in the cooked quinoa and mix well.
  4. Warm the tortillas in the oven and then make the Quinoa Breakfast Tacos by taking a scoop of the egg and quinoa mixture and placing it in a tortilla.
  5. Top your taco with avocado, tomato, scallions, cilantro and fresh squeezed lime!
