How To Make A Roasted Veggie Bowl

Instructions
  1. Preheat oven to 400 degrees Fahrenheit.
  2. Wash broccoli and brussel sprouts and cut into pieces.
  3. On a parchment paper-lined baking sheet, place the sprouts and broccoli and drizzle with olive oil, salt, pepper and red pepper flakes.
  4. Toss well and then distribute evenly.
  5. Roast for 40 minutes.
  6. For the dressing:
  7. Mix the tahini, lemon juice and salt in a bowl.
  8. Stir in water as needed to change to desired consistency.
  9. Add parsley and stir.
  10. To finish this dish, place the cooked vegetables in a bowl and top with avocado slices.
  11. Gently toss and then pour the dressing on top.
