How to Make “Boosted” Banana Bread
- 3 medium ripened bananas (about 1.5 cups)
- 1 “chia egg” (1 tablespoon chia seeds mixed with 2.5 tablespoon water - allow to sit for 5 minutes to create a gel)
- 1 tsp vanilla extract
- 3 tbsp melted coconut oil
- 3 tsp baking powder
- ¾ tsp sea salt
- ¼ cup pure maple syrup
- ¾ cup almond meal (ground almonds)
- ¾ cup almond milk
- ¼ tsp nutmeg
- ½ tsp cinnamon
- 1 ¼ cup gluten free flour (coconut flour, brown rice flour, quinoa flour etc.)
- Preheat oven to 350 degrees.
- In a large bowl, mash the bananas with a fork.
- Add the wet ingredients into the bowl: coconut oil, “chia egg”, vanilla, almond milk and maple syrup. Blend together with a whisk.
- Add sea salt, spices, baking powder, almost meal, and gluten free flour. Stir together until well blended.
- In a loaf pan lined with parchment paper, pour in the banana bread mixture.
- Bake for 45 minutes or until ready.
- The bread is ready when it feels firm to touch, golden brown on top and a skewer comes out clean after inserted into the loaf.
