Coconut Oil No-Bake Cookies
 
 
Ingredients
  • 3 ¼ cup of oats
  • ½ cup coconut oil (measured as liquid)
  • ½ cup of peanut butter
  • ½ cup coconut or almond milk
  • 2 cups of Stevia to sweeten
  • ¼ cup cocoa powder
  • ½ tsp salt
  • 1 tsp vanilla
Instructions
  1. Measure the oats into a bowl and set aside.
  2. Place a piece of wax paper on the counter to use when the cookies are done.
  3. In a large saucepan, combine the coconut oil, peanut butter, coconut or almond milk, Stevia, cocoa powder and salt.
  4. Turn heat to medium (no higher than this) and stir consistently until the ingredients come to a rolling boil.
  5. Set a time for 4 minutes and stir continually. Make sure that you scrape the sides and the bottom regularly to avoid burning.
  6. Once the timer has gone off, remove the pot from the heat and add the vanilla. Adding the vanilla will cause the mixture to boil, so stir it in quickly.
  7. Add the previously measured oats and stir until they are all coated.
  8. Scoop oats a spoonful at a time onto the wax paper and let them cool before eating.
