Curry Zoodles (Zucchini Noodles)
 
 
Ingredients
  • 2 tsp turmeric
  • 1 tsp coriander
  • 1 tsp cumin
  • 1 tsp pink Himalayan sea salt
  • 2-3 cloves minced garlic
  • 1 inch pieces of ginger, grated; alternative: 1 tsp dried ginger powder
  • 2 tbsp coconut oil
  • 1 cup homemade bone broth
  • 1 ¼ cup coconut milk
  • 3 medium carrots, chopped
  • 1 red pepper, diced
  • 4-5 medium zucchinis, spiralized into noodles
  • Juice from ½ a lemon
  • Cilantro (garnish)
Instructions
  1. Combine turmeric, coriander, cumin, salt, chopped garlic and grated ginger in a small bowl. Set aside.
  2. In a large skillet, melt coconut oil over medium/high heat. Add spices, bone broth and coconut milk. Stir until mixed well.
  3. Add carrots and red peppers. Bring to a boil and then turn the head down and let simmer for 5 minutes.
  4. Add zucchini noodles and cook for 5 minutes.
  5. Squeeze in lemon juice.
  6. Garnish with fresh cilantro.
