Dark Chocolate Coconut Nuggets
 
 
Ingredients
  • 2 cups shredded unsweetened coconut
  • ¼ cup coconut oil (unrefined)
  • ¼ cup raw honey
  • ¼ tsp kosher salt
  • ½ cup dark chocolate (70% or higher)
Instructions
  1. Melt the coconut oil in a pan over low heat until liquid.
  2. Put shredded coconut, coconut oil, honey and salt in a blender and blend on high until smooth (about 5 minutes).
  3. Spread the mixture in a 9x5 glass container or a platter (line with foil or leave space around the edges to make it easy to remove once frozen).
  4. Freeze for 15 minutes.
  5. While coconut mixture is freezing, melt the dark chocolate.
  6. Spread the melted chocolate over the frozen coconuts and put back in the freezer until the chocolate is hardened.
  7. Remove and cut into nuggets.
  8. Should you have any leftovers, keep them in the refrigerator!
