Healthy Rolled Oats Oatmeal Nut Cookies
 
 
Ingredients
  • 3 large, very ripe bananas
  • 2 ½ cups rolled oats
  • ¾ cup raw cashews
  • ¾ cup dried cranberries
  • ¼ cup peanuts, roughly chopped
  • ¼ cup sesame seeds
  • ¾ tsp cinnamon
  • ¼ tsp baking soda
  • ¼ tsp salt
Instructions
  1. Preheat oven to 350 and place oven rack in the middle of the oven.
  2. Combine ripe bananas, cashews, cinnamon, baking soda and salt in a food processor and blend until smooth.
  3. In a bowl, mix oats, dried fruit, sesame seeds and peanuts. Pour wet banana mixture into the dry ingredients.
  4. Mix all ingredients until combined.
  5. Use a spoon or your hands to form cookies and place them on a baking sheet lined with parchment paper.
  6. Bake for 25 minutes (or until the edges are slightly brown but the centers are soft).
  7. Remove from the oven and let the cookies cool for 10 minutes.
  8. Serve warm. Enjoy!
