Chocolate Coconut Energy Balls
These snacks are packed with healthy fats and energy-rich nutrients to help you and your kids make it through long summer days. They can also be put in a cooler and brought on car rides for a pick-me-up.
  • ⅓ cup coconut oil
  • ¾ cup organic raw honey
  • ½ cup almond butter
  • ½ cup coconut flakes
  • 1 tbsp vanilla extract
  • ⅔ cups raw cacao or cocoa powder
  1. Melt coconut oil, honey and almond butter together on the stove. Keep the heat as low as possible so you don’t burn out nutrients. :)
  2. Add cacao powder and vanilla extract and stir.
  3. Sprinkle in coconut flakes.
  4. Drop by spoonful onto a cookie sheet and set in the freezer for about 20 minutes.
  5. Store in an air-tight container or back and keep in the fridge.
