Brain-Boosting Chocolate Mint Macaroons {Grain Free / Vegan}

  • 2 cups fine unsweetened coconut flakes
  • 1.5 cups pitted dates, soaked for 5 minutes in warm water to soften
  • ¼ tsp alcohol free vanilla
  • ¼ tsp sea salt
  • 1.5 scoops Organifi Green Juice Powder
  • ½ tsp. peppermint extract
  • ½ cup dark chocolate chips
  • ½-1 cup cocoa powder - for coating
  1. Preheat oven to 325 degrees.
  2. Place all ingredients (except for chocolate chips and cocoa powder) in a food processor or high speed blender until thick and sticky.
  3. Fold in dark chocolate chips.
  4. Form into 2" balls and roll in cocoa powder to coat.
  5. Place on greased cookie sheet (using coconut oil, ghee or grass-fed butter) and bake 15 minutes, or until barely golden (outside cocoa powder coating with darken).
  6. Store in an airtight container in the refrigerator up to 7 days
