Quinoa Tabbouleh (Middle Eastern Salad Dish)
- 1 bunch Italian parsley, finely chopped
- ½ cup quinoa, cooked and cooled
- 1 large tomato, diced
- 1 medium cucumber
- 1 small onion, diced
- 1 lemon or lime (freshly squeezed)
- ¼ cup extra virgin olive oil
- Pink Himalayan sea salt and ground black pepper to taste
- Cook the quinoa separately and set aside to cool. Add all ingredients in a large bowl, mix and serve.
