Quinoa Tabbouleh (Middle Eastern Salad Dish)
  • 1 bunch Italian parsley, finely chopped
  • ½ cup quinoa, cooked and cooled
  • 1 large tomato, diced
  • 1 medium cucumber
  • 1 small onion, diced
  • 1 lemon or lime (freshly squeezed)
  • ¼ cup extra virgin olive oil
  • Pink Himalayan sea salt and ground black pepper to taste
  1. Cook the quinoa separately and set aside to cool. Add all ingredients in a large bowl, mix and serve.
