Fenugreek-Garlic Dip
 
 
Ingredients
  • 2 Tbsp fenugreek powder
  • ½ c chopped onion
  • 1 Tbsp minced garlic
  • ¼ c olive oil
  • 1 lg tomato, seeded and chopped
  • 1 sm chile pepper, seeded and chopped
  • ¼ tsp cumin
  • ¼ c chopped cilantro
  • 1 Tbsp lemon juice
Instructions
  1. Put fenugreek and 2 cups water in bowl.
  2. Cover and set stand 12 hours.
  3. Pour off water.
  4. Cook onion and garlic in oil in skillet over medium heat, stirring, 4 minutes.
  5. Add tomato, pepper, cumin, and soaked fenugreek.
  6. Cook on low, stirring, 8 minutes.
  7. Puree in blender with cilantro, juice, and salt to taste. Add a bit of water if needed.
