Sweet Potato Fluff

Serves: 4
  • 2 small sweet potatoes, roasted whole until soft throughout, peeled
  • 2 scoops stevia sweetened vanilla protein powder
  • 2 tbsp cinnamon
  • 1 tsp nutmeg
  • Dash of salt
  • Unsweetened vanilla almond milk for consistency
  1. Place all ingredients except almond milk in a bowl. Combine thoroughly with a fork.
  2. Add almond milk if a thinner consistency is desired.
  3. Serve warm or cold as a topping or in a bowl with toppings on it.
  4. Suggested toppings: unsweetened, shaved coconut, cacao nibs, toasted pumpkin seeds.
