Kale, Apple and Walnut Salad
 
 
Ingredients
  • 3 cups kale (any kind, ribs removed if desired)
  • 1 radish, thinly sliced
  • 1 apple, sliced
  • ½ cup walnuts
  • 2 organic chicken breasts, cooked as desired and cubed

  • Dressing

  • 1 Tbs. olive oil
  • 2 tsp, red wine vinegar
  • 1 tsp. dijon mustard
  • Juice of ½ a lemon
Instructions
  1. In a small bowl, whisk dressing ingredients together; set aside.
  2. In a larger bowl, add the salad ingredients.
  3. Toss salad with the dressing and top with chicken.
