Easy Homemade Pho Soup To Warm You Up This Season (Vegetarian)

This is precisely how I feel about pho.

I’ll walk near and I’ll walk far to get a taste of this delicious soup.

Yes, it’s true – my love interest is a noodle soup. It’s THAT good.

But don’t take my word for it, this PHO recipe will having you falling head over heels in love. And lucky for you, you don’t need to walk anywhere because you can whip this up in the comfort of your own home.

What Is PHO?

Pho is a Vietnamese soup that consists of rice noodles, broth, herbs and meat.

That’s the standard definition – but all you really need to know is that it’s a bowl full of love and happiness and has magical comforting powers that will leave you feeling 100% satisfied.

Rice Noodles

  • 5 cups water
  • 4 ounces rice noodles
  • 2 garlic cloves
  • 1 2-inch piece of ginger, cut in half
  • 2 scallions, finely chopped
  • 2 baby bok choy, sliced lengthwise
  • ½ small yellow onion, cut into 1” pieces
  • 4 ounces shiitake mushrooms, stems removed and reserved
  • 2 star anise
  • 1 cinnamon stick
  • 1 tbsp peppercorns
  • ½ tsp whole cloves
  • 3 tbsp tamari
  • 1 tbsp rice vinegar 


  • Fresh basil leaves
  • Mung bean sprouts
  • Lime slices
  • Chile sauce 


1. Over low heat in a medium pot, add the star anise, cinnamon stick, cloves and peppercorn.

      • Stir 30 seconds until fragrant. 

2. Add the water, onion, garlic, ginger and stems of the mushrooms.

      • Simmer for 20 minutes.
      • Strain and return the liquid back to the pot. 

3. Cut the mushroom caps and add them to the pot.

      • Add the tamari, rice vinegar and scallions.
      • Simmer 15 minutes. 

4. Add bok choy and simmer until tender, about 8 minutes.

5. Taste and adjust seasoning to desired flavor.

6. In a separate pot of salted boiling water, cook the rice noodles according to the package.

      • Drain and rinse with warm water. 

7. Place the noodles in the bottom of a bowl and ladle the pho over the noodles.

    • Serve the toppings on a small side plate so each person can customize their own pho! 

If you want to “beef up” this soup, you can also choose a protein source of your choice (tofu, edamame, tempeh, animal protein).

And now you can live happily ever after.
