EASY Homemade 3-Ingredient Protein Cookies (Vegan, Gluten & Dairy Free)

Call me a control freak, but the main reason I like to cook is so that I know EXACTLY what is going into the dishes I am eating.

However, give me a recipe with anything more than 5 ingredients and I can guarantee that that recipe has a 1 percent chance of ever being made.

What can I say… I like to keep it simple.

And since the world of baking is a mix of science, art and endless ingredients – well, let’s just say that cookies are NOT my forte.

That is… until NOW.

These easy peasy 3-ingredient protein cookies are p-e-r-f-e-c-t for when you are “eating clean” and want a sweet and healthy snack.

3-Ingredient Protein Cookies
  • 2 medium ripe bananas
  • 1 cup oats
  • 1 scoop protein powder (chocolate or vanilla)
  1. Preheat oven to 350 degrees.
  2. In a bowl, mash your peeled bananas with a fork.
  3. Add the protein powder and mix with bananas.
  4. Note: If you bananas aren’t fully ripe you may need to add a touch of almond milk or water to achieve a dough consistency.
  5. Add the oats to the mixture and also pour in your desired “add-ons.”
  6. Mix until everything is thoroughly combined.
  7. On a greased cookie sheet (with coconut oil or grass-fed butter), drop a spoonful of the dough on the sheet.
  8. Lightly press down the dough to flatten for even baking.
  9. Bake for 15-20 minutes until the cookies are golden brown.
  10. If the cookie is still soft, bake a few minutes longer.
