You take a bunch of ingredients, throw them in a pot, warm them up and VOILA – a well-rounded, heart-warming, belly-hugging dinner.

Better yet, some soups requires such minimal effort to eat that you don’t even need to CHEW. Sounds like the perfect fit for a healthy meal after a long day at work or on a cold, cozy and lazy winter’s day.

This Toasty Turmeric Tomato Soup recipe takes it even a step further by including the all mighty, shining-star-of-a-spice – TURMERIC.

So while you sit back, relax and sip on this soup, the turmeric will be hard at work giving your body one heck of a healthy BOOST.

Tomato

How To Make Toasty Turmeric Tomato Soup

Ingredients:

  • 5 ounces cherry tomatoes, washed and cut in halves
  • 1 can diced tomatoes (with liquid)
  • 2 tsp turmeric powder
  • ½ cup low-sodium vegetable stock
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tsp coconut oil
  • 1 tbsp apple cider vinegar
  • ½ tsp sea salt
  • Black pepper, to desired taste
  • 1 tsp dried basil

Instructions:

1. In a saucepan, heat the coconut oil and fry the garlic and onion for 1 minute.

      • Add turmeric and cherry tomatoes. Cook until tomatoes soften and release their juice. 

2. Add the canned tomatoes, vegetable stock, apple cider vinegar and basil.

      • Bring to a boil, cover with lid, and simmer for 5 minutes. 

3. Pour the soup mixture into a blender and pulse several times until it has a creamy consistency.

    • Season with salt and pepper to taste.

Now comes the fun and creative part of garnishing your Toasty Turmeric Tomato Soup:

  • Make toasted croutons with Gluten & Carb-Free Bread
  • Sprinkle your favorite nuts and seeds on top
  • Place a dollop of plain Greek yogurt for added creaminess
