Instead of eating a “normal” meal, you can give your body a chance to recharge while still giving it nutrition by making a delicious detox veggie broth.

Carrot
  • Good source of antioxidants

Parsnip

    • Dietary fiber, folate, potassium, vitamin C
Sweet Potato

Daikon

Detox Veggie Broth
 
Ingredients
  • 6 large carrots, peeled and chopped
  • 2 large parsnips, peeled and chopped
  • 2 medium sweet potatoes, peeled and chopped
  • 1 large red onion, skin on and chopped
  • 1 large daikon radish, chopped
  • 2 cups of shiitake mushrooms
  • 4 garlic cloves, skin on and crushed
  • 2 tbsp dulse flakes
  • 2 sprigs fresh thyme
  • 2 sprigs fresh flat-leaf parsley
  • 12 cups water
  • Sea salt and freshly ground black pepper
Instructions
  1. In a large pot, combine water and ingredients.
  2. Bring to a boil over high heat.
  3. Reduce heat to low and cover loosely. Simmer 2-3 hours.
  4. Strain through fine-mesh sieve.
  5. Season with salt and pepper to taste.
  6. Vegetables can be saved and eaten separately or used for other recipes, such as stews and sauces.
  7. Cool and store in a glass container in the refrigerator for up to 4 days.
  8. Can be stored in the freezer for up to 3 months.

Customize the flavor of your detox broth by adding in one or more of the following:

  • Bean sprouts
  • Toasted sesame seeds
  • Seaweed
  • Celery
  • Fennel
  • Bay leaves
  • Himalayan pink salt

Use this broth as a lite and cleansing lunch that can stimulate your body to release toxins, which will leave you feeling lighter, brighter and healthier!
