Deliciously Satisfying Dessert Without The Guilt (here’s a simple recipe)

Rice pudding is the ultimate comfort dessert and makes the perfect edition to a savory Sunday roast dinner. Here is a healthy twist on the traditional recipe with just a few simple ingredients. This recipe contains no gluten, dairy or refined sugar and can actually be considered a healthy dessert!
Easy Peasy Rice Pudding
- 2 Cups of Cooked Rice
- 2 Cups of Coconut Milk
- 2 Tbsp of Vanilla Paste
- 1 Tbsp of Raw Honey
- 1 Tsp of Cinnamon
- ½ Tsp of Nutmeg
- Place all ingredients in a pot and bring to a boil.
- Reduce heat and let simmer.
- Taste and add more sweetness if needed.
Cooked Rice – Provides instant energy, stabilizing blood sugar levels and is also gluten-free.
Coconut Milk – Delicious and a great substitute for cow’s milk, is rich in vitamins C, E, B1, B3, B5 and B6 as well as iron, selenium, calcium, iron, magnesium and phosphorus.
Vanilla Paste – The sweet condiment provides small traces of much needed minerals such as magnesium, iron, potassium and calcium.
Raw Honey – The natural sweetener is a wonderful substitute for sugar and has antiviral, antibacterial, and antifungal properties.
Cinnamon – Keeps blood sugar steady, preventing insulin spikes.
Nutmeg – Helps promote a restful and sound sleep.
