Raw Caramel Bite Recipe Sweetened With Dates, Maple Syrup and Coconut Oil

Raw Caramel Slice Recipe
 
Gluten-free, dairy-free, refined sugar-free

Ingredients
  • For the BASE:

  • 1 cup dates
  • ½ cup almonds
  • 1 tsp coconut oil

  • For the CARAMEL:

  • 1 cup dates
  • ½ cup coconut oil
  • 1 ½ tbsp unhulled tahini
  • ¼ cup pure maple syrup
  • 1 cup soaked cashews
  • ⅓ cup water

  • For the TOP LAYER:

  • ¼ cup coconut oil
  • ¼ cup pure maple syrup
  • ¼ cup raw cacao powder
Instructions
  1. For the BASE:

  2. Pulse all base ingredients in a food processor or blender until it is crumbled and sticks together easily when pressed.
  3. Pour into the bottom of a tin lined with parchment paper and press down until firm. Put in the freezer.

  4. For the CARAMEL:

  5. Pulse all caramel ingredients together in a food processor or blender until smooth. Use more water if necessary.
  6. Pour on top of the base and return to the freezer.

  7. For the TOP LAYER

  8. Combine all top layer ingredients into a small saucepan and turn heat to low. Stir continuously until combined (should look like chocolate sauce).
  9. AFTER the caramel layer is firm, pour this chocolate sauce on top and put back into the freezer.
  10. After one hour, remove from the tin, slice it up and serve or store in an airtight container and refrigerate.

  • Dates – Dates are beneficial to the digestive system and may help prevent constipation and diarrhea, soothe intestinal distress and help with heart problems and anemia. Dates are sweet and make an excellent substitute for refined sugar and corn syrup.
  • Almonds & Cashews – Everyone is crazy about nuts right now, due to recently revealed research that connects regular nut consumption with increased longevity and better health. Nuts are a source of healthy fats, which are vital fuel for the body and essential for mood stability, metabolism and maintaining a healthy weight.
  • Coconut Oil – Coconut oil is another source of healthy fats, in particular, medium chain fatty acids. These are converted quickly by the body into energy. Coconut oil also has antibacterial, antimicrobial, antiviral, antioxidant and anti-cancer properties.
  • Maple Syrup – Best if organic, pure maple syrup is a perfect substitute for refined sugar and other sweeteners. Studies have found that maple syrup contains antibacterial, anti-cancer and antidiabetic properties.
  • Raw Cacao Powder –  Raw cacao is said to be one of the world’s most concentrated sources of antioxidants. This delicious addition to any dessert has been shown to lower bad cholesterol, lower risk of heart disease, boost mood and aid digestion.
