Delicious Vegan Pancakes

Who wouldn’t want to wake up to this awesome healthy and delicious vegan breakfast pancake? Not only is it topped with hummus, salsa (red pepper) and – one of our favorites – the avocado, but it is made with the amazing protein packed chickpea flour!

The Health Benefits Of Chickpeas

Chickpeas are a little less well known legume that taste a bit like nuts and have a texture that is almost buttery. They have a lot of wonderful health benefits that are sure to spruce up your diet and become a regular part of your life.

Chickpeas are high in fiber, keep your heart healthy, and aid in weight loss. These legumes have both soluable and insoluable fiber. This means that the fiber not only helps bulk up stool, preventing digestive system issues and constipation, but the soluble fiber will grab onto cholesterol-filled bile and guide it straight out of your body.

High in protein, chickpeas are one of the many vegetarian and vegan options to replace the need for meat in the diet. This pancake will give your body the energy it needs to start your day out right.

Chickpeas boost iron and manganese in the body while stabilizing the blood sugar levels that normally spike with other foods. Often with traditional white breads and pancakes, you will have a sugar crash, which is why this alternative is perfect for stabilizing your energy level and starting out your day.

Red Pepper Health Boost

Red peppers are full of vitamin C (nearly 300% DV), which you need to boost your immune system and keep you healthy. Vitamin C also helps you absorb other healthy minerals such as iron for your blood stream.  

These awesome peppers also combine the superpowers of vitamin C and A to create an incredible antioxidant. In addition to protecting your DNA and cells, the vitamin A will also help you keep your eyes healthy and greatly aid in your night vision.

This happy pepper gives you vitamin B6 and magnesium, which will help decrease symptoms of PMS and symptoms of general anxiety. This vitamin combo is a natural diuretic and will help your body release excess water weight as well.

Red peppers also have one other little know boost to your health. Without increasing your heart rate or blood pressure, they stimulate thermogenesis in your cells, which naturally increases your metabolic rate. That’s right, your metabolism will get a boost right as you are waking up in the morning.  

This recipe takes 10 minutes of prep time with 10 minutes of cook time and yields one large delicious serving.

Jumbo Chickpea Pancake
  • 1 green onion, finely chopped (about ¼ cup)
  • ¼ cup finely chopped red pepper
  • ½ cup chickpea flour (also known as garbanzo flour or besan)
  • ¼ tsp garlic powder
  • ¼ tsp fine grain sea salt
  • ⅛ tsp freshly ground black pepper
  • ¼ tsp baking powder
  • Pinch red pepper flakes (optional)
  • ½ cup + 2 tbsp water
  • For serving: salsa, avocado, hummus, cashew cream (optional)
  1. Prepare the vegetables and set aside. Then preheat a 10-inch skillet over medium heat.
  2. In a small bowl, whisk together the chickpea flour, garlic powder, salt, pepper, baking powder and optional red pepper flakes.
  3. Add the water and whisk well until no clumps remain. I like to whisk it for a good 15 seconds to create lots of air bubbles in the batter.
  4. Stir in the chopped vegetables.
  5. When the skillet is pre-heated (a drop of water should sizzle on the pan), spray it liberally with olive oil or other non stick cooking spray.
  6. Pour on all of the batter (if making 1 large pancake) and quickly spread it out all over the pan. Cook for about 5-6 minutes on one side (timing will depend on how hot your pan is), until you can easily slide a pancake flipper/spatula under the pancake and it's firm enough not to break when flipping.
  7. Flip pancake carefully and cook for an additional 5 minutes, until it appears lightly golden. Make sure you cook for enough time as this chickpea pancake takes much longer to cook compared to regular pancakes.
  8. Serve on a large plate and top with your desired toppings. Leftovers can be wrapped up and placed in the fridge. Reheat on a skillet until warmed throughout.
