How To Make A Superfood Detox Salad

Ingredients:

Salad Dressing
  • 1 small green cabbage
  • 1 small red cabbage
  • 5 carrots
  • 1 red beet
  • 1 avocado
  • ½ cup kale, stemmed
  • ¼ cup walnuts
  • ¼ cup raw apple cider vinegar
  • ½ cup pure olive oil
  • 1 tbsp chia seeds
  • 2-3 cloves garlic, minced

Instructions:

1. In a food processor, shred the green cabbage, carrots, kale and beets.

      • Add walnuts and pulse 3-5 times. 

2. In a small bowl or lidded jar, making the dressing by mixing together the oil, vinegar, chia seeds and garlic.

3. Using the red cabbage leaves as bowls, scoop in the salad mixture and drizzle  it with the dressing. Top it off with sliced avocado!

If you wish, sprinkle a little sea salt, fresh ground black pepper and a squeeze of fresh lemon juice to amp up the flavor.

This superfood detox salad is a powerful, healthy lunch to help you blast through your day with boundless energy!
