“Boosted” Banana Bread – Vegan & Gluten Free

There is just something so tantalizing about taking that first bite of fresh baked bread.

It hugs your tongue, kisses your taste buds and sings a sweet melody all the way until it reaches your stomach.

That is… unless you are gluten sensitive and the thought of bread turns your stomach into knots! Ugh. I’m right there with ya.

However, you can “have it all” by using a bit of creativity in the kitchen and whipping up your own banana bread.

This recipe is “boosted” because it is:

  • Gluten free
  • Vegan
  • Grain free
  • Contains no refined sugar
  • Nut free option (use coconut flour and coconut milk)

This banana bread is also made with ingredients that will benefit your health.

Chia Seeds
  • Rich content of omega-3 fatty acids.

Coconut Oil
  • Made up of medium chain triglycerides (MCTs) that are quickly absorbed by your body.

How to Make “Boosted” Banana Bread
  • 3 medium ripened bananas (about 1.5 cups)
  • 1 “chia egg” (1 tablespoon chia seeds mixed with 2.5 tablespoon water - allow to sit for 5 minutes to create a gel)
  • 1 tsp vanilla extract
  • 3 tbsp melted coconut oil
  • 3 tsp baking powder
  • ¾ tsp sea salt
  • ¼ cup pure maple syrup
  • ¾ cup almond meal (ground almonds)
  • ¾ cup almond milk
  • ¼ tsp nutmeg
  • ½ tsp cinnamon
  • 1 ¼ cup gluten free flour (coconut flour, brown rice flour, quinoa flour etc.)
  1. Preheat oven to 350 degrees.
  2. In a large bowl, mash the bananas with a fork.
  3. Add the wet ingredients into the bowl: coconut oil, “chia egg”, vanilla, almond milk and maple syrup. Blend together with a whisk.
  4. Add sea salt, spices, baking powder, almost meal, and gluten free flour. Stir together until well blended.
  5. In a loaf pan lined with parchment paper, pour in the banana bread mixture.
  6. Bake for 45 minutes or until ready.
  7. The bread is ready when it feels firm to touch, golden brown on top and a skewer comes out clean after inserted into the loaf.

To serve, top it off with a healthy dollop of whipped coconut cream or a spoonful of almond butter drizzled with a touch of raw honey. Yum yum yum!!!
