As a kid, I was usually a “packer.”

My mom preferred for us to eat more natural and healthy foods when we were kids, which meant bringing our own lunches to school every day.

Yes, I was that kid sitting there munching on fruit leather while all the other kids had their neon colored fruit roll ups (FYI – homemade fruit leather is super delish).

While it may be quicker and easier to pick up that package of snacks from your local market, most of them are over processed and contain unnecessary icky ingredients that can mess with your health.

A BETTER option is to DIY and make your own Back To School healthy snacks.

These uber delicious 5-ingredient granola bars are equal parts sweet, salty and crunchy – which makes for a perfect healthy and energizing snack for you and your family!

Medjool Dates

5-Ingredient Granola Bars
Serves: 10
  • 1 cup pitted dates (packed)
  • ¼ cup raw honey
  • ¼ cup almond butter
  • Alternative: creamy salted peanut butter
  • 1 cup chopped almonds, roasted & unsalted
  • 1 ½ cups rolled oats
  • Additional flavor options: dried fruit, nuts, vanilla, chocolate chips
  1. Process dates in a food processor for 1 minute until it turns into a dough-like consistency.
  2. Place oats, almonds and dates in a large bowl (set aside).
  3. Warm honey and almond butter in a small saucepan over low heat.
  4. Pour and stir honey/almond butter into the oat mixture.
  5. Continue to mix until dates are thoroughly dispersed throughout.
  6. Line an 8x8 dish with parchment paper and place the granola bar mixture into it, pressing down firmly until flattened.
  7. Use the bottom of a glass to pack down the bars (this helps them hold together better).
  8. Place the bars into the fridge for 20 minutes.
  9. Remove from the pan and chop into 10 even bars. Store in an airtight container in the freezer to keep freshness.
  10. Use within a few days.
