3 Nutrient-Packed Salads for Weight-Loss

These scrumptious salads are bursting with vitamins, minerals and antioxidants.  They are  the perfect way to get your daily dose of your essentials in just one bowl. High in nutrients and low in calories, these nutrient-packed salads will fill you up for hours, while being kind to your waistline.

Gorgeous Greens
 
Ingredients
  • 2 cups spinach leaves (stems removed)
  • 2 cups kale
  • ½ cucumber, chopped
  • 1 green pepper, chopped
  • 2 Tbs. pumpkin seeds
  • 2 organic chicken breasts, cooked as desired and cubed

  • Dressing:

  • 2 Tbs. olive oil
  • ½ cup filtered water
  • ⅓ cup lemon juice, freshly squeezed
  • ¼ cup goji berries
  • 2 Tbs. nutritional yeast flakes
  • 1 Tbs. tamari or coconut amino
  • 1 Tbs. apple cider vinegar (with “the mother” included)
  • 1 Tbs. raw organic honey
Instructions
  1. In a small bowl, whisk dressing ingredients together; set aside.
  2. In a larger bowl, add the salad ingredients.
  3. Toss salad with the dressing and top with chicken.

Plant Based Beauty
 
Ingredients
  • 2 cups spinach
  • ½ cup blueberries
  • ½ cup blackberries
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 2 organic chicken breasts, cooked as desired and cubed
  • ¼ cup poppy seeds

  • Dressing

  • ½ cup lemon juice
  • ¼ cup flax oil
  • ¼ cup tahini (sesame paste)
  • 2 Tbs. raw organic honey
  • 2 tsp. minced garlic
Instructions
  1. In a small bowl, whisk dressing ingredients together; set aside.
  2. In a larger bowl, add the salad ingredients.
  3. Toss salad with the dressing and top with chicken.

Kale, Apple and Walnut Salad
 
Ingredients
  • 3 cups kale (any kind, ribs removed if desired)
  • 1 radish, thinly sliced
  • 1 apple, sliced
  • ½ cup walnuts
  • 2 organic chicken breasts, cooked as desired and cubed

  • Dressing

  • 1 Tbs. olive oil
  • 2 tsp, red wine vinegar
  • 1 tsp. dijon mustard
  • Juice of ½ a lemon
Instructions
  1. In a small bowl, whisk dressing ingredients together; set aside.
  2. In a larger bowl, add the salad ingredients.
  3. Toss salad with the dressing and top with chicken.
