3 Kale Chip Recipes You’ll Wish You’d Heard of Before

I LOVE snacks, especially when I can easily make them out of ingredients that I already have in my kitchen.
When I first transitioned to a healthier way of eating, I thought all of my new snacks were unremarkable substitutes for the processed junk that I had previously been chowing down on. After cleansing my palate, I realized that these snacks are not meant to substitute the sugary confections and salt licks that I enjoyed in my former life. My new snacks are not only healthier, but more flavorful and filling than their processed counterparts.
These kale chips are a prime example of the phenomena that I am describing. What started out as, “Groan…kale chips? Really?” has become “There better still be some kale chips left when I get home!” Yes, I am totally serious.
Try these recipes out and see if they don’t have you mean-mugging your household when they’re gone. (Don’t say I didn’t warn you – if you want to see my take on nacho flavored kale chips, click HERE)!
To Prepare Kale Leaves for all recipes:
1. Spray 1 bunch of kale with a veggie wash and rinse well (or just rinse well if organic).
2. Remove stalk from kale and tear into chip size pieces. Make them larger than you want the chip to be because they will shrink while baking.
3. Dry leaves in a salad spinner to remove excess water and pat dry with a paper towel to remove any remaining visible water if necessary.

Sun-Dried Tomato and Garlic Kale Chips (A.K.A. Dracula’s Brain)
Nutty and sweet with a garlic-packed punch, these chips are sure to satisfy even the most sophisticated palate. Just make sure you have some mints on hand for afterwards!
Sun-Dried Tomato and Garlic Kale Chips (A.K.A. Dracula’s Brain)

Recipe type: Snack
- 1 bunch kale
- 1 oz raw, soaked sunflower seeds
- 1 oz raw, soaked pumpkin seeds
- ½ cup sun-dried tomatoes
- 1 tsp garlic powder
- ¼ tsp salt
- Enough olive oil to coat kale leaves
- Enough Tamari to spray on all leaves
- Preheat oven to 350 degrees.
- Place all ingredients (except olive oil and kale) in a food processor and run until the seasoning is as fine as you want it.
- Lightly drizzle olive oil over prepared kale leaves and make sure to coat all surfaces of the leaves.
- Spray leaves evenly with Tamari (it is better to coat leaves with olive oil before applying Tamari to prevent steaming).
- Sprinkle seasoning over kale leaves, making sure to coat well.
- Place leaves on a parchment paper lined baking sheet, leaving enough space between the leaves so they don’t overlap. Sprinkle with more seasoning if necessary.
- Place tray in the middle of the oven and bake for 10-12 min. or until desired crispness (check the kale chips after 7-8 min to make sure they don’t burn).
- Remove from oven. Let cool and enjoy!

Olive Oil and Pink Salt Kale Chips
Simple to make and super tasty, once you try these, you’ll know why they’re a classic!
Olive Oil and Pink Salt Kale Chips

- 1 bunch of kale
- Enough olive oil to coat kale leaves
- Himalayan pink salt to taste
- Preheat oven to 350 degrees.
- Lightly drizzle olive oil over prepared kale leaves and make sure to coat all surfaces of the leaves.
- Sprinkle Himalayan pink salt over leaves.
- Place leaves on a parchment paper lined baking sheet, leaving enough space between the leaves so they don’t overlap.
- Place tray in the middle of the oven and bake for 10-12 min. or until desired crispness (check the kale chips after 7-8 min to make sure they don’t burn).
- Remove from oven. Let cool and enjoy!

Chili-Lime Kale Chips

Recipe type: Snack
- 1 bunch kale
- 2 tbsp coconut aminos
- 1 ½ tbsp lime juice
- ⅛ tsp of cayenne
- Himalayan pink salt to taste
- Enough olive oil to coat kale leaves
- Preheat oven to 350 degrees.
- Add all ingredients (except olive oil) to a bowl and whisk until well combined.
- Lightly drizzle olive oil over prepared kale leaves and make sure to coat all surfaces of the leaves.
- Toss kale leaves with seasoning mixture.
- Place leaves on a parchment paper lined baking sheet, leaving enough space between the leaves so they don’t overlap.
- Place tray in the middle of the oven and bake for 10-12 min. or until desired crispness (check the kale chips after 7-8 min to make sure they don’t burn).
- Remove from oven. Let cool and enjoy!
